Directions:

In a separate bowl, whisk the eggs, milk, melted butter, and oil until smooth and fully combined.
4. Mix It All Together
Pour the wet ingredients into the dry ingredients. Stir gently with a spatula until just combined—do not overmix. If you’re adding cheese, corn, or jalapeños, fold them in now.
5. Fill Muffin Tin
Use a spoon or ice cream scoop to divide the batter evenly among the muffin cups—fill each about 3/4 full.

- Preheat oven to 350 degrees Fahrenheit
- In a medium bowl, combine all the dry ingredients
- In a small saucepan or microwave, melt butter, and set aside
- In a small bowl, combine all wet ingredients and whisk
- Once combined, slowly pour in the butter while whisking the wet ingredients
- Combine wet ingredients into dry and whisk until fully combined
- Scoop batter into 12 lined muffin cups, filling 3/4 full
- Place into the oven for 20 mins, check with a toothpick to make sure batter is cooked all the way through
