Sourdough Breadcrumbs
If you’re looking for a delicious way to reduce food waste while adding incredible flavor and crunch to your cooking, homemade sourdough breadcrumbs are the answer. These golden, tangy crumbs elevate everything from casseroles and pasta dishes to chicken cutlets and meatballs. Best of all, they’re easy to make and store beautifully. Whether you’re using leftover sourdough loaves or intentionally baking extra, this quick recipe transforms stale bread into a versatile pantry staple.

Why Sourdough Breadcrumbs?
Sourdough naturally has a deeper flavor than standard bread—it’s slightly tangy, earthy, and incredibly aromatic. When toasted, that flavor concentrates, creating breadcrumbs that taste artisan-level even in simple dishes. Use them to top baked mac and cheese, crust fish or chicken, or add texture to roasted vegetables. You’ll never go back to store-bought again.
Tools You’ll Need
- Serrated bread knife
- Cutting board
- Baking sheet
- Parchment paper (optional)
- High-speed blender
- Airtight container or jar for storage

Sourdough Breadcrumbs Recipe
Ingredients
- 1 loaf stale or dried sourdough artisan bread (not sandwich bread), cut into chunks
- 2–3 tablespoons olive oil (optional, for richer toasted crumbs)
- ½ teaspoon sea salt
- Optional: garlic powder, dried herbs (rosemary, thyme, oregano), black pepper, or paprika
Step-by-Step Instructions
1. Prepare the Bread
If your sourdough is still soft, let it sit out uncovered for a few hours to dry. Dryer bread turns into more even, crisp crumbs. Slice the bread into rough chunks about 1–2 inches in size.

2. Preheat and Prep
Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper for easy cleanup. Spread the sourdough pieces in a single layer so they toast evenly.
3. Add Oil and Seasonings (Optional but Delicious)
For extra flavor and crispness, drizzle the bread lightly with olive oil and sprinkle with salt. Add any optional seasonings here if you want flavored breadcrumbs.

4. Toast the Bread
Bake for 45 minutes, tossing every 15 minutes. The bread should be fully dry and lightly golden, not browned. Over-baking can create bitter crumbs, so keep an eye on it.

5. Cool Completely
Allow the toasted bread pieces to cool before processing. Warm bread can create steam, resulting in soggy crumbs.
6. Pulse into Breadcrumbs
Add the cooled bread pieces to a food processor or blender. Pulse in short bursts until the crumbs reach your desired texture—fine for meatballs, coarse for crispy toppings.

7. Store
Transfer the breadcrumbs to an airtight jar or container. They keep for 2 weeks or longer in the pantry, just check them before using. They will also last 3-6 months in the freezer.

Tips for Best Results
- Use truly stale bread—the drier it is, the faster and more evenly it toasts.
- Season lightly unless you plan to use the crumbs in multiple recipes.
- For panko-style crumbs, pulse only a few times to maintain larger flakes.
- Freeze leftovers to keep them fresh and prevent clumping.
Homemade sourdough breadcrumbs are one of the easiest, most satisfying zero-waste kitchen projects. With just a few ingredients and simple steps, you’ll have a flavorful, versatile topping ready to use anytime. Enjoy the crunch!
